Pastry Chef Courtney Schmidig of Benu - Biography

A Bay Area native, Courtney Schmidig began her career with a degree from the Culinary Institute of America in nearby Greystone, CA. Aiming to develop proper technique, Schmidig landed a position at Thomas Keller’s revered French Laundry in 2004. Over the course of her eight years in the Yountville kitchen, Schmidig rose from Pastry Cook to Pantry Chef to Head Pastry Chef. Four of those years were spent working under Chef de Cuisine Corey Lee, with whom Schmidig was reunited in her next position, at Lee’s Benu. Joining the Benu team in 2013, Schmidig now offers her refined dishes in the heart of San Francisco.
