Pastry Chef Christina Mercado of The Vanderbilt Grace - Biography

Though Christina Mercado originally trained on the savory side, she’s had a formidable career in hospitality on the whole. After earning a degree in culinary arts from Johnson & Wales University in Providence, Rhode Island, Mercado continued her studies, earning an MBA in hospitality. Then it was time to travel. Mercado sojourned to Singapore, Thailand, and Peru to pursue her passion for international cuisines.

Back in the kitchen, Mercado became the pastry chef of The Chanler at Cliff Walk in Newport, Rhode Island, before moving on to Finale Desserterie & Bakery in Cambridge, Massachusetts, as kitchen manager and chef. In 2014, she took on the role of executive pastry chef of Castle Hill Inn back in Newport.

In 2016, Mercado went from back of house to behind the stick when she joined Newport’s Grace Vanderbilt hotel as a bartender—though she still leads in-house pastry classes.
