Pastry Chef Christian Lai Chun of Pacific Institute of Culinary Arts - Biography

Christian Lai Chun was born and raised on the island of Mauritius, a republic in the Indian Ocean that counts Madagascar as one of its closest neighbors. There, Chun built a solid foundation on which to begin his career. He attended culinary school and apprenticed at Royal Palm Beachcomber Luxury resort before studying pastry in France. Outside Paris, Chun developed his skills at Chez Cordier and patisserie Aux Délices d’Etampes. 

Back in Mauritius, Chun worked as pastry chef at Maritim Resort & Spa Mauritius and Taj Exotica Resort & Spa. Moving to Canada, he served as chef de partie at two Toronto pastry shops before joining the Ritz-Carlton, where he earned his first critical notices and accolades.

In 2015, Chun traversed the country, relocating to Vancouver to join the faculty of the Pacific Institute of Culinary Arts as a baking and pastry arts chef-instructor.
