Rising Star Chef Brett Cooper of Outerlands - Biography

Brett Cooper often cooked with his mother growing up, but it was the lure of a friend’s job that initially drew him into the kitchen as a teenager. Taking a position as prep cook, Cooper quickly developed a love for the job and rose to sous chef within two years.

Moving on to various kitchens throughout his native Colorado, Cooper decided to pursue a professional career and headed to San Francisco for culinary school. His first internship at Rubicon, with 2005 San Francisco Rising Star Stuart Brioza, was fundamental in developing his drive and talent. Cooper worked at the restaurant for four and a half years, until it’s closing in 2008. He then landed at the doorstep of another great San Francisco mentor, Daniel Patterson, working as sous chef at Coi. and developing a foundation in creativity.

Looking for another challenge, Cooper set out for his first chef position. He worked briefly as chef de cuisine at Saison, alongside San Francisco 2010 Rising Star Chef Joshua Skenes. After meeting with Outerlands’s owners Dave Muller and Lana Porcelo, Cooper undertook his next task: shifting his fine-dining background into the restaurant’s more casual setting. At Outerlands, Cooper brings a deep appreciation for product, finesse with classic and modern technique, and fresh perspective.
