Chef Amos Watts of Old Major - Biography

Born in Southern Illinois, and putting down roots in Omaha, NE, partner and Executive Chef Amos Watts, learned on the family farm how to grow vegetables, tend to the land and the essential value of agriculture and seasonality. Sowing the seeds of what will become his career path.

Attending college, Watts began working in kitchens and soon developed a passion for cooking, leading him to culinary school. With a degree from Johnson and Wales in 2003 and years of experience as a Sous Chef, Amos moved to Northern California and worked most notably, as the Sous Chef for Chef Douglas Keane at Cyrus restaurant in Healdsburg, California.  At Cyrus, Watts met Steve Redzikowski working on the line at the acclaimed two Michelin star California restaurant.

Chef Watts moved back to Denver and began working at Jax Fish House in lower downtown Denver.  Watts and Redzikowski then opened the now acclaimed Acorn, the Denver extension of the popular Oak at Fourteenth. After more than fifteen years of experience, Watts joined the Old Major team as co-owner and executive chef in February of 2016.
