Chef Alessandro Caporale of Casa Lever - Biography

Italian born and bred, Alessandro Caporale was inspired to cook by countless hours spent with his grandmother in the kitchen at her house in Abruzzo. During weekly visits, he learned the fundamentals of classic, authentic Italian cooking and how to man a kitchen using fresh and seasonal ingredients from the family garden. Imbued with his grandmother’s passion for cuisine, Caporale decided to pursue a career in food. He traveled through Italy and held positions at some of the country’s most venerable restaurants, including Ristorante Il Golfo in Abruzzo, Just Cavalli Café in Milan, and one Michelin-starred La Rosetta in Rome under the renowned chef Massimo Riccioli. During this time he perfected his technique, expanded his repertoire, and deepened his passion for Italian cuisine.

Caporale left Italy for New York City in 2005 and quickly found himself as executive chef of Sant Ambroeus Group, with authentic Italian restaurants located in the West Village, The Upper East Side, and Southampton, Long Island. In 2009, when Sant Ambroeus opened Casa Lever, he was appointed chef de cuisine alongside Mario Danieli. Now as the restaurant’s executive chef, Caporale has emerged as the creative and disciplined force behind its Milanese-centric menu, which focuses on the finest ingredients and refined flavors drawn from his childhood and formative years working with Italy’s best chefs.
