Pacific Northwesterner Adam Hegsted is a master when it comes to local game, wild fruits, vegetables, and locally-grown produce. Currently executive chef of the Coeur d'Alene Casino Resort Hotel, he has been invited to cook at the James Beard House. Educated at the Seattle Institute of Art, Hegsted has won regional and national accolades. He likes to be involved in every step of meal preparation, from picking stinging nettles from the golf course at the Coeur d'Alene Resort to fiddlehead ferns from the woods behind the steakhouse and composing desserts. Hegsted is the chef/founder of the "nomadic" Northwest pop-up restuarant/supper club called The Wandering Table.
