Chef Aaron Tootill of Fire & Sage - Biography
Frederick, Maryland native Chef Aaron Tootill traveled as a child to Rockland, Maine and soaked up a love of fresh seafood at a young age. The seed was planted and he went on to attend Pennsylvania Culinary Institute of Art in Pittsburgh. He began developing as a chef at Equinox Resort & Spa in historic town-turned trendy ski resort-town Manchester, Vermont.
He would soon feel the pull of home, though, and returned to Frederick’s restaurant district before moving to the nearby Baltimore Inner Harbor Marriott as sous chef. Still remaining with the Marriott group, he eventually moved up the ranks and landed at the Fairview Park Marriott as chef.
This hasn’t stopped him from making the time to be heavily involved in his local community. He volunteers at local schools, helping to foster a love of the culinary world in today’s youth, and getting involved in numerous Children's Miracle Network events.
Currently chef at the Fire & Sage at the Washington Marriott at Metro Center, he has a pared-down culinary philosophy emphasizes the flavors naturally present in the raw ingredients, and maintains a health-conscious bent. To this end, he’s making plans to plant an herb and vegetable garden for Fire & Sage restaurant, in the heart of DC. He is also moving to gain status for the restaurant as a member of the Green Restaurant Association. Tootill is also acting as VIP Host Chef for 2010's Washington DC Area Rising Stars.
