Hi! My name is Stephanie Zonis, and welcome to the April, 1998 edition of "For Chocolate Lovers Only". Each month you'll find great recipes, tips and recommendations on where to find chocolate specialties.

Chocolate Recommendation of the Month: Pancake Hollow Chocolates, at 81 Vineyard Ave in Highland, NY 12528. They can be reached by phone at (914) 691-5880, by fax at (914) 691-6812, or via e-mail at: PanckeHllw@aol.com. Check out their website, too, at: www.mayne.net./phc; note the program for military personnel serving abroad. Pancake Hollow has chocolate bunnies in sizes to suit everyone. I love their Angel Wings--potato chips with a stripe of peanut butter, dipped in chocolate. Try their toffee-and-nut popcorn with chocolate, or choose an assortment in a classy black and gold box. And the Mega Mutant Peanut Butter Cups, wrapped in gold foil, are great for kids--of any age. Pancake Hollow is a true "family" chocolatier, and prices are moderate.

Product Note: Olestra, a fat substitute manufactured by Procter & Gamble and sold under the brand name "Olean", is now being used in Frito-Lay's "WOW" brand snack chips. Because olestra's molecules are too large for the human system to digest, it passes through your system without adding any calories. Unfortunately, olestra makes some people sick--sometimes very sick; the most common effects are abdominal cramping and diarrhea. Additionally, olestra strips the fat-soluble vitamins (A,D,E, and K) and carotenoids from your system. The FDA mandates that snacks made with olestra replenish the fat-soluble vitamins, but not the carotenoids; there is some evidence that carotenoids can help prevent cancer, heart attack, and macular degeneration. I do not believe that enough is known about olestra's effects on the human system (especially in the long term); I will not eat any product made with olestra, and I urge you to think very carefully before doing so.

Do you have a comment, question or suggestion? I'd like your input into this column. You can reach me at: sdziadwm@nac.net; please specify that you're writing regarding "For Chocolate Lovers Only". Thank you!
