Junior Merino's native Mexico revealed to him the versatility
of spices, fruits, and vegetables that manifest themselves in the
unusual and award-winning cocktails he now serves at The Modern.
When he arrived in New York at 16, Merino began to work as a server
at the Boulevard Café, where he stayed for 6 years.
While working full-time, he earned his high school diploma, juggling
additional courses in English, graphic design, and food handling.
At Roth's Westside Steakhouse, Merino's interest in wine
and cocktails began to take over. In addition to delving into mixology,
he studied assiduously over the next 6 years to become a Master
Sommelier. His cocktails at The Modern reveal a constant
exploration of artisan-crafted liquors from around the world and
a willingness to experiment with exotic ingredients and new flavor
profiles.
Passion-Ginger Margarita

Yield: 1 drink
Ingredients:
Margarita:
- 2 ounces Simbra Azul Tequila Blanco
- 1/2 ounces Cointreau or triple sec
- 1 ounce passion fruit juice
- 1/2 ounce mango puree
- 1/4 ounce fresh ginger juice
- 1/2 ounce Monin Passion Fruit syrup
- 6 crushed coriander seeds
- 1/2 ounce fresh lemon juice
Jamaica Salt:
- 1 cup of Kosher salt
- 1/2 cup of sugar
- 1/4 cup of Jamaica Powder (hibiscus flower powder)
- 1 teaspoon of cinnamon powder
To Serve:
- 1/4 ounce fresh lemon juice
- Jamaica salt
Method:
Put margarita ingredients in a shaker. Combine ingredients for jamaica
salt. Dip the rim of an old fashioned glass in lemon juice and rim
with jamaica salt. Shake margarita and serve.
