Lobster and Cucumber Rolls

Ingredients:
- 2 Maine lobsters
- 2 oranges
- 1 cup raw bean sprouts
- 1 cup konn yaku (yam starch noodles)*
- 1 cucumber, sliced very thin, lengthwise
Method:
Steam lobster. Remove and discard shells.
Peel oranges, removing all white pith. Segment oranges, cutting
between membranes on either side of each segment, to release from
membrane.
Lay out 1 slice cucumber. Add ¼ cup each bean sprouts and
konn yaku. Lay a few orange segments on top. Roll up cucumber slice
to form roll. Repeat three times, serving 1 roll per person, garnishing
with extra orange segments.
*Can be purchased at Asian specialty markets.
