This is always a huge hit at parties. You can't go wrong with this classic carrot cake recipe. The addition of pineapple in the icing creates a tangy contrast to the overall dish and keeps them coming back for more.


Preheat the oven to 350°F. Grease and flour a 9 x 13 inch cake pan.

For the cake, combine ingredients in order given, mixing well after each addition. Bake for 1 hour in preheated oven. Remove from oven. Allow to cool slightly, then turn upside down and tap lightly on pan to remove. Let sit until cool before icing.

For the icing, cream margarine, cream cheese and sugar until fluffy. Mix in pineapple. Apply generously to top of cake. Sprinkle nuts on top of cake after icing.
