Q: I'm looking for a chocolate pate a choux recipe. Could I just add cocoa powder to choux paste.

A: Normally you take out flour and add cocoa in it's place...(ex. if the recipe calls for 2 cups of flour, take out 1/4 cup and add a 1/4 cup of cocoa powder in its place)...I have never tried making chocolate choux paste but it should work...You might want to look on google.com and do a search for a recipe too..Thanks.

Q: Hi Bobby, Question for you. I want to use your roasted green chili mayo to make a tuna salad sandwich. How does pickled jalapenos sound with that to add crunch??? Should I add a dijon,celery, onions? What would be your choice??? Thank you for the forum and the help

A: I think pickled jalapenos would be great...I would add red onions and celery...leave out the Dijon, don't need it with the Green Chile Mayo...Thanks.

A: You just need a heavy bottomed stainless steel pan..I recommend AllClad pans..The pans come in a variety of sizes...choose the one that you feel is big enough for you..

Q: Thanks for the information about chicken safety. That was really interesting to read about free-range/pricier chickens being even more contaminated (I won't waste the money anymore). I always cook thoroughly though - and use a thermometer to make sure.
