Marseille Bouillabaisse requires a variety of fish. The different, subtle flavors of each dish are one of the main reasons Bouillabaisse has become so famous. The following ingredients should be used when making Bouillabaisse.

Fish

Marseille Bouillabaisse must consist of at least 4 types of the following:

Scorpion fish
White scorpion fish
Red mullet
Skate
Conger eel
John Dory

Optional
Cigale de Mer (Mediterranean crustacean resembling a lobster)
Spiny lobster

Other ingredients
Salt
Pepper
Saffron
Olive oil
Garlic
Onions
Fennel
Parsley
Potatoes
Tomatoes
