Tapioca is the root of the Cassava plant (from the same family as the caster bean) . It is washed with Prussic Acid. The pulp is strained until the starch separates from the roots. The starch is then placed on hot iron plates and left to dry. During the starch forms uneven , milky pearls,hence Pearl Tapioca.
