I make tapioca pudding for special family occasion...my mom and grandmom both made it. However, my recipe is a bit different. You soak 1/2 cup of tapioca pearls overnight in 2 cups warm tap water. The next morning you drain it and add 1 cup of cream (half and half will do) and 1 1/2 cups milk to a double boiler (or VERY heavy pan if you are careful)...bring milk to a rolling boil and add drained tapioca. Cook on medium heat for 30 minutes, stirring very often so it does not stick/burn. Meanwhile, separate 2 LARGE eggs (or 3 smaller one)...put yolks in medium bowl and add 1/2 c sugar abd 1/2 teas salt...stir well...now add some of the HOT tapioca mixture..2-3 spoons at a time..to equalize the heat...then go ahead and add egg mix to tapioca in pan..and stirring well, cook for 10-15 minutes until it is very thick. Meanwhile, beat egg whites until stiff. Add 1 teas vanilla. Now FOLD in the hot mixture to the egg whites, slowly. Stir well...and chill slightly.. whip 1 cup of whipping cream. Fold this into the cooled tapioca and chill completely. Terrific....
