The new restaurant that he is opening is called Craft. The executive chef will be Marco, the current sous chef at Gramercy. The concept will be similar to Alain Ducasse's restaurant Spoon, in Paris, though the food will probably bear no resemblance.

The menu will feature fish or meats prepared a specific way (grilled, braised, etc.) but the diner will be able to choose the accompaniments they want. So one day they might want roasted turbot with sauteed porcini and roasted potatoes and the next time they might want the same fish with braised lentils and root vegetables, etc., etc.

The restaurant is supposedly opening in June, though we all know that openings can be pushed back considerably. Both Tom & Marco are really excited about this concept and with the backing of Gramercy, it should do very well.
