Bake a pie crust on an upside down pie plate and prick holes into the crust to let the air out and bake.
First drain crushed pineapple and save the juice.
On the stove place :
2 Cups of sugar
1 cup of flour
1/4 teaspoon of cream of tartar
one cap of Vanilla (I use clear it gives it a better color)
and 1 Cup of pineapple juice and if there is not one cup add water.
Bring to a medium boil and stir until thick.
When it is thick add pineapple and stir if it thins out keep heat on it stir and it will thicken.
Place in a cool pie crust.
Make a merangue of egg whites and put on a cool pie. If the is cream of Tartar is in the merangue and use power sugar instead of regular it will not run.
