Using a potato ricer or a terry cloth towel, squeeze as much moisture as possible out of fresh mushrooms before cooking with them. You will be amazed at how much liquid will come out and you will be left with more true mushroom flavor. Even button mushrooms taste like an exotic variety after removing the liquid.
