Rinse thoroughly and remove in skin that peels off.
To super tenderise, marinate in kiwi fruit for 24 hours. After 48 hours, the calamari tends to become over tender. I cooked some on an open grill and it was almost mush after 2 days.
Another tenderiser is to soak in milk for at least 24 hours.
Cooking calamari should be quick over high heat. Can coat in any preferred batter, flour egg and breadcrumbs, or just plain flour, or grill whole on BBQ. They only take a few minutes. After that, calamari toughens.
