i just returned from germany and was served a raclette dinner. we had, fillet of pork, chicken breast (both plain and marinated) shrimp and sausage meeat. the host served peas, carrots, onion, peppers, and 2-3 kinds of cheese. she also provided mustards, soy sauce and a "steak" sauce. the experimentation with combinations of the above was wonderful. hope this helps. she served the potatoes on the side with butter and parsley.
