I love to use smoked reindeer. It's easiest to cut frozen - and make as thin slices as you can!

The Russian way is also to add tiny pickled cucumber which are just great if you also add some honey on them (this might sound really weird but try it first, honey should be warm as well). For cucumber and honey the perfect sauce is sour cream (doesn't require any spices).

My friends love to have pickled onions and olives but my favourite is to have peaches and garlic sour cream with the potatoes - not to mention the cheese!

For the (white!) wine try Fendant, Alsace Pinot Blanc, Diamant d'Alsace Pinot Blanc, Pinot Blanc Klevner Réserve, Duboeuf Viognier - or if you can't find any of these Laroche Chardonnay L is ok as well.
