A lot of different cheeses work great - for example mozarella, Monterey Jack etc., the thing to do is experiment, you almost can't go wrong. I sometimes serve French bread with it instead of potatos. And i've used bay shrimp, ham, or mushrooms in the little pans. So far my top favorite are thinly sliced pears with blue cheese (ex: Cambozola.)
