As a maitre'd in one of the top UK restaurants I can only say one thing about table manners. If what you ae doing does not offend your own table and the persons you are dining with then it does not matter which utensil you use for which course. A skilled waiter will simply adjust the cutlery in front of you so that you have the correct items for the next course. If you use the wrong thing nothing will be said or done to draw attention to the error, we will simply replace the items as necessary. Of course this is only true in restaurants of quality where the waiters have seen all before.
