I've finally decided that my "natural talent" (if you can call it that)
in the culinary arts is not enough to get me the kind of position in the
kitchen that I desire. So, now I look for a school to get proper training.

Seeing as you all work in this industry, what sort of qualities do you
recommend I look for in a culinary institute? Any particular recommendations
as to WHAT schools to look at in the New York area? Thanks so much.
