: Although I agree that a diner should definitely no have to wait more than a few minutes for a server to produce a check, proper service dictates that a diner should ask for the check. Too many people have forgotten this. And too many restaurants have their servers set down checks TOO SOON! My favorite (sarcastic) is when I'm still eating. I guess I didn't want more coffee or an after dinner drink.
Where can I go to find professional opinions and statistics on customer service in upscale restaraunts? I am a classically trained chef who has been educated in the "fine" art of table service, both Russian Silver tray, and Frech Giradon table side service. I am doing research in order to open a service to finer restaraunts in order to train their staff properly and provide the type of service an owner would be proud of as well as a guest would be pleasured to receive. Does anyone have any ideas? I have searched many sites and can only find sites about food and sales statistics, doesn't anyone focus on quality service in a genuine fashion to increase sales as compared to the "tricks of the trade" we have all become accustomed to?
