Zuchinni Stew
Ingredients:
In a 5 qt dutch oven heat oil add onion ,garlic and potatoes
saute 5 minutes or so till lightly browned
On medium high heat add rest of ingriedients
if using canned tomatoes add juice and half cup to one cup water
if using fresh add enough water to cover 3/4 s of the way.
Cook on med low heat for 1 hour till vegetables are tender.
Enjoy with fresh Italian bread
