Stuffed Peppers
(This is an old family recipe that I cut down to almost fat-free,
depending if you use ground beef and what cheese.
Ingredients:
Cut peppers in half and scoop out center.
Place in boiling water
for 5 minutes.
Drain.
Brown ground meat.
Make brown rice
according to directions.
Saute rice with the meat and the can
of stewing tomatoes.
Place mix in cooked peppers. Pour
remaining tomato sauce over top of peppers.
Cover and bake at
350 for 20 minutes. Uncover and top with cheese.
Cook
10 minutes more.
Serves 4.
