Mushrooms Lauristina

Take about eight mushroom caps, each about two centimeters across and place in a fry pan with a little olive oil. Heat until soft, approximately two minutes either side. Take them from fry pan and place in a circular manner on a plate. chop about three bacon rashers, removing the rind and gristle, into small pieces, about a quarter of an inch each, throw the bacon pieces into the fry pan and stir them around with a wooden spoon for a couple of minutes until cooked.

Fill each mushroom cap with about a dessert spoonful of cottage cheese, then top the lot of the mushroom caps with the bacon. Spread it around so all caps are covered.

Then place the plate with the mushrooms, cheese and bacon into a heated oven, around 150 degrees c. for about ten to fifteen minutes.

After that time remove from oven and sprinkle fresh herbs , about a tablespoon or so of oregano, parsley or a combination of the two on top of the mushrooms and bacon. and finally sprinkle a little grated parmesan cheese over the top of the lot! Voila, there you have "MUSHROOMS LAURISTINA".
