Grilled Portabello Mushroom Meltdown Trilogy

Ingredients:

Heat the mushroom cap in oven, add salt and pepper to the eggs and scramble the eggs soft. After the eggs are cooked to the soft state, place on top of the mushroom cap and cover with the two slices of guyere cheese and place back in the oven to melt the cheese.

That is it. It is a great breakfast or brunch item. In addition 2 slices of bacon can be added after the eggs are placed on the mushroom and before the cheese is melted.
