Thai Stir Fry

Ingredients:

Chop chicken breasts (or use shrimp or scallops)and vegatables (preferably peppers, mushrooms, sprouts etc).
Saute in wok w/ olive oil, garlic, onion, tablespoon or two of thai Peanut sauce, (or peanut butter) and sesame oil.
boil cellophane (or chinese noodles) noodles for only a minute or two,
add to the chicken and veg mixture.

Voila!
