Mediterranean Chicken Pasta
Ingredients:
Cook 1 pound of pasta (almost any kind will do - I prefer Penne Rigate) Drain & rinse. Set aside.
While the pasta is cooking, cut up 1 lb. bonesless chicken breasts into bite size pieces and cook in olive oil for approx. 8 minutes.
Add rinsed kidney beans and cook for approx. 3 more minutes. Add garlic, salsa, and tomatoes. Cook until mixture is heated.
Add drained pasta to mixture and toss. Serve with grated cheese over top.
Approximate time to table: 25 minutes
