Debi's Bowtie Pasta 1) Boil farfelle (bowtie pasta) to pkg. directions. rinse to remove starches and set aside and keep warm on platter.
2) Add a Tbsp of olive oil to saute pan, heat up pan. add 1 chopped onion, 2 cloves garlic, 1 Tbsp fresh cilantro, and 2 small diced tomatoes.
3) When above mixture has been simmering 5 minutes, add 1 lb. mussels and 2 Tbsp veg broth.
4) Allow mussels to cook until shells open.
5) When all shells have opened, remove pan from heat.
6) Add sauce and mussels atop pasta, arranging the mussels in their shells on top.
7) Garnish with fresh cilantro sprogs and lemon slices.
8) Serve with a great crusty french breadm salad, and wine.
