Pasta with hot peppers

Cook pasta in a large pan of salted boiling water.

Skin peppers (not the chili ones) either by blackening them on top of the Aga or grilling them and or any other method you know.

Core them and slice them lengthways into thin long strips. Chop the garlic very, very fine and the ginger into thin long strips. Strip the seeds out of hte chilis and chop them finely.

Roughly chop coriander, including the root and combine with the other ingredients and the pasta while still warm and serve - avoid cheese.
