Chili

  • 3 pounds lean ground beef
  • 1/4 cup corn meal
  • 1 medium red onion finely diced
  • 2 cloves garlic,minced
  • 1 teaspoon dried cilantro
  • 1 teaspoon dried parsley
  • 1 teaspoon dried crushed red chilis
  • 8 tablespoons chili powder
  • 3 tablespoons cumin powder
  • 4 tablespoons tumeric powder
  • 3 teaspoons of paprika
  • 1 1/2 teaspoons garlic powder
  • 2 teaspoons powdered oregano
  • 1/4 teaspoon black pepper
  • salt to taste
  • 1 small can diced green chilis
  • 1 can tomato puree(2 cup size)
Place ground beef in dutch oven , cover with cold water, set stove on medium high heat, begin to break apart meat with spatula or potato masher as water comes to a simmer.

After meat is broken into small bits add chopped onions,minced garlic,cilantro,parsley and dried crushed red chilis, stir well. While stirring add corn meal, stir until well blended, adjust heat and simmer for 1 hour until meat is tender. Remove from heat, let stand for 5 minutes, skim any fat from the top. While waiting assemble all spices together in bowl, mix well, set aside.

Return chili to heat, add tomato puree and canned diced green chilis, stir well. Return to a simmer and cook for 5 minutes,stirring often. After 5 minutes add spices while stirring. Simmer for 5 minutes more stirring often, taste and add salt as needed, stir well. before serving.

Serves 4......

can be frozen...good with crackers....flour tortillas, also makes great chili dogs. ground deer meat or lamb may be substituted for ground beef.
