- 1 can diced Tomatoes (14 ozs) unseasoned
- 1 can sliced carrots (15 ozs)chopped
- 1 can chicken broth or vegetable broth
- 1 cup finely chopped onion
- 2 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tbsp. parsley
- 3 tbsp. cajun seasonings (non spicy)
- 1 tsp. garlic powder
- 1/2 tsp. dried thyme leaves (crushed)
1.Strain tomatoes and reserve juice.
2. In a medium stock pot,over medium high heat,heat olive oil. Add Onion,tomatoes,and carrots. Cook until onion is transparent.( 3-4 minutes)Stir frequently. Use a spoon or fork to smash carrot into small pieces.
3.Add broth and remaining ingreidents.Stir well.
Cook for 20 minutes stirring frequently.
4.Let cool for 5 minutes. Garnish if desired.
Makes 4 servings.
