Crystallized Violets

- Violet bloomes
- egg whites
- sugar
Dip violet blossoms into egg whites beaten until frothy. Dip carefully into sugar, coating all surfaces well, and molding petals back to original shape with a toothpick. Dry in 200-degree oven for 30 to 40 minutes or until sugar crystallizes. Place gentaly onto racks to cool. Sprinkle areas that appear syrupy with sugar.
