- boneless chicken cutlets
- egg
- bread crumbs
- 4-6 vine ripe tomatoes
- 1 red onion
- 1/2 cup fresh basil
- 2 cloves of garlic
- balsamic vinegar
- olive oil
Chop tomatoes, onion, garlic cloves and basil and mix in medium bowl.
Add balsamic vinegar and a splash of olive oil and cover.
Let the tomato mixture marinade for about 20 minutes.
Cover chicken with egg and coat with bread crumbs.
Saute chicken in pan.
when the chicken is just about done add tomato mixture on top for a few minutes (make sure you let the balsamic vinegar seep into the chicken for flavor)
