Cool grilled corn salsa

  • 5 Ears impeccably fresh sweet corn
  • 1/4 cup diced red onion
  • 1 clove minced garlic
  • 3 cups diced fresh tomatoes
  • 1 tblspoon chopped fresh Cillantro
  • 1 tblspoon chopped fresh mint
  • salt and fresh cracked pepper
  • Lemon/lime juice
  • Jalepeno Peppers
Begin by grilling corn in the husk, you want to char the husk but only brown the corn. It will have a sweet complex smoky taste Once grilled let cool and cut from cob.

While the corn is grilling prepare the vegetables and herbs. In a mixing bowl combine everything but Chilis, citrus and salt/pepper When all is combined season with the Citrus, S&P, and Jalepeno to your taste. For having such simple ingrediants this is a very complex tasting dish, with lots of cylinders firing at once, the smoky sweetness of the corn works so well with the tomatoes and the mint serves to cool the effect that the hot chilis have. It is also perfect because all of these things are available at the same time of year, seasonality is all.

Serve with fish, chicken, as an hors-d' ouvre or with chips. The key to this dish is simplicity and freshness of ingrediants. Every ingrediant must be perfect in order for this to work... But when friends taste it they will think you are STARCHEF.
