Puerto Rican Rice

  • 1 cup rice
  • 2 cups water
  • 1&1/2 Tbsp. sofrito
  • 1 Tbsp. crushed, or freshly chopped garlic
  • 1 5oz. can Vienna sausages
  • 1 Tbsp. tomato paste
  • 1 5.75oz jar small spanish olives(pimiento,w/pits-your preference)
  • Adobo to taste (approximately 2 to 3 shakes)
  • Sazon - 1 packet
  • 1/2 med. onion chopped

In medium size pot, combine 1 cup of water and all ingredients but rice. Stir and cook for 1 minute over medium flame. Then add in second cup of water and rice. Lower flame and cover tightly. Cook for approximately 20-25 minutes. DO NOT STIR RICE until last 5 minutes or so. It is okay if some sticks and burns on bottom. If this happens, scrape bottom and mix into rice mixture - makes for extra taste.

Makes approximately 4 servings.
