Big Beautiful Berry Salad

Serves 12
Ingredients:
- 3 pints fresh, ripe strawberries
- 1 pint fresh blueberries
- 1 pint fresh blackberries
- 1 pint fresh raspberries
- 2 tablespoons unsweetened apple juice concentrate, thawed if frozen
- 2 tablespoons fresh orange juice
- 2 tablespoons finely grated orange zest
- One-quarter cup chopped fresh mint leaved
- 8 fresh mint sprigs, for garnish
- Sweetened Whipped Cream for serving
1. Rinse all the berries very gently and pat dry carefully with paper towels. Hull the strawberries
and cut into quarters. Place in a large bowl with the blueberries, blackberries, and raspberries.
2. Mix the apple juice concentrate, orange juice and zest, and the chopped mint leaves together
in a small bowl. Add to the berries and gently toss. Let rest at room temperature for 1 hour
before
serving.
3. To serve, spoon the berries into a large decorative serving bowl and garnish with the mint
sprigs gathered into a small bouquets. Serve with Sweetened Whipped Cream.
