Big Beautiful Berry Salad

.... Serves 12

Ingredients:
  • 3 pints fresh, ripe strawberries
  • 1 pint fresh blueberries
  • 1 pint fresh blackberries
  • 1 pint fresh raspberries
  • 2 tablespoons unsweetened apple juice concentrate, thawed if frozen
  • 2 tablespoons fresh orange juice
  • 2 tablespoons finely grated orange zest
  • One-quarter cup chopped fresh mint leaved
  • 8 fresh mint sprigs, for garnish
  • Sweetened Whipped Cream for serving


1. Rinse all the berries very gently and pat dry carefully with paper towels. Hull the strawberries and cut into quarters. Place in a large bowl with the blueberries, blackberries, and raspberries.

2. Mix the apple juice concentrate, orange juice and zest, and the chopped mint leaves together in a small bowl. Add to the berries and gently toss. Let rest at room temperature for 1 hour before serving.

3. To serve, spoon the berries into a large decorative serving bowl and garnish with the mint sprigs gathered into a small bouquets. Serve with Sweetened Whipped Cream.
