Sous
Chef for a Day
Anago’s
newest successful venture is a program called “Sous Chef for a Day.”
It offers budding cooks the chance to slice, dice and sauté with the
experts. Chef Calderone and his
full-time sous chef devote an afternoon to working with people who want to
experience the highs and lows of cooking in a restaurant kitchen.
Participants pay $100 and work under Chef Calderone’s watchful eye from
noon until 5pm. They do the prep
work for the evening meal, help make stock and soak up as much knowledge as they
can. At the end of their shift they
receive a $100 gift certificate to enjoy dinner or brunch at Anago. “Sous Chef
for a Day” is unique to Anago and is offered Tuesday through Saturday each
week. To reserve a place, call
Susan Finegold at (617) 266-6222.
The Food: Contemporary American influenced food from the
rotisserie, wood-fired grill and oven. Anago will
also service the hotel’s banquets, room service and the Samuel
Adams brew pub.
Beverages: American, French and Italian wines with explosive
flavors and intense aromatics from small vintners who produce
limited quantities of wine.
Design: The open kitchen, conceived by Bob Calderone,
features a wood-fired grill, rotisserie and homemade wood oven
faced with Pennsylvania fieldstone.
Rich quilted fabrics adorn the
banquettes and window treatments of the beaux-arts dining room. A
vaulted
15-foot canvas ceiling, arched French style windows, along with
whimsical wrought iron chandeliers
maintain the classic qualities of the turn of the century room.
