FRIED OYSTER & WILD MUSHROOM FRITTERS

(Serves 8)
  • 3 eggs
  • 1 1/2 c buttermilk
  • 3 Tb sweet butter, melted
  • 1 3/4 c AP flour
  • 1 Tb fresh thyme leaves
  • 1 Tb chives
  • 1 1/2 c chick pea flour (available in natural food stores)
  • 1 Tb baking powder
  • 1 Tb salt
  • 1 tsp black pepper
  • 1 Tb sugar
  • 2 red peppers-finely
  • 2 c chopped mushrooms
  • 1 c chopped oysters-drained
  • oil for frying
-saute mushrooms in olive oil with salt and pepper and savory herbs
-cool completely
-combine wet ingredients
-combine dry ingredients
-add dry to wet, whisk smooth
-add peppers, mushrooms and oysters, stir smooth
-let rest 30 minutes, adjust seasoning
-heat oil to 350 , fry in batches, do not overcrowd
-serve with lemon and parsley
