FRIED OYSTER & WILD MUSHROOM
FRITTERS
(Serves 8)
- 3 eggs
- 1 1/2 c buttermilk
- 3 Tb sweet butter, melted
- 1 3/4 c
AP flour
- 1 Tb fresh thyme leaves
- 1 Tb chives
- 1 1/2 c chick pea
flour (available in natural food stores)
- 1
Tb baking powder
- 1 Tb
salt
- 1 tsp black
pepper
- 1 Tb
sugar
- 2 red
peppers-finely
- 2
c chopped
mushrooms
- 1
c chopped
oysters-drained
- oil for frying
-saute mushrooms in olive oil
with salt and pepper and
savory herbs
-cool
completely
-combine wet
ingredients
-combine dry ingredients
-add dry to wet, whisk
smooth
-add peppers,
mushrooms and oysters, stir
smooth
-let rest 30
minutes, adjust seasoning
-heat oil to 350 , fry in
batches, do not overcrowd
-serve with lemon and
parsley
