To
prepare the peaches, peel the peaches and place in a pan with
all the ingredients. Cook over a moderate fire for ten minutes.
Remove the peaches and cut in half. Cook the liquid until the
cooking liquid is reduced in half and is nice and dense.
To
serve, pour the syrup on top of the peaches and sprinkle with
sliced, toasted almonds.
