Roberto Donna, continuing his goal to provide authentic Italian cuisine to Washington, DC, opened his first spaghetteria in the summer of 1993 and his second in March of 1994. "With all the emphasis on pasta, I think Americans have forgotten about real spaghetti. Radicchio goes back to the basic idea of an Italian spaghetteria, alone with simple rotisserie cooking and the woodburning oven. It takes you back to basics," says Roberto.

The concept is lively and fun, the walls covered with drawings of colorful ducks, rabbits and Radicchio by artist Katy Flier. The open kitchens near the back of the restaurants display a woodburning oven with the scents of pizza baking to perfection. Il Radicchio serves its customers all the plain pasta one can eat and offers over 20 sauces in separate serving dishes.
