- 1/4 c canola oil
- 1 yellow onion
- 1 T crushed garlic
- 1 t salt
- 2 T curry powder
- 1 T gram masala
- 2 lb pie pumpkin-peeled and diced
- 2 potatos-peeled and diced
- 3 c vegetable broth
- 1 c tomato juice
- 1- 14oz can coconut milk
- 2 c soy milk
Saute onions and garlic in oil until onions are soft- add spices,
pumpkin and potatos.
Saute 5-10 min stirring constantly. Add broth, tomato juice
and coconut milk. Simmer until most of the liquid is absorbed.
Transfer to food processor and blend until smooth. Return to
pot adding soy milk and heating toroughly. Do not boil.
Garnish with cilantro and dallop of yogurt.
