Perona Farms Cheesecake
Have all ingredients at room temperature before starting. Blend cream cheese and sugar using the paddle attachment on the Hobart Mixer.
Slowly add the eggs one at a time.
After all the eggs are added and fully blended, fold in the sour cream, vanilla and the almond extract. Mix only until blended. DON'T OVERMIX. Fill a 10" spring pan three quarters full, and place in a water bath. Bake at 350F. for approx. 1hr-1hr&15min. To test for doneness, when you wiggle the pan slightly, the center should be fairly firm.
