Low cholesterol vegetable casserole

3 cups crushed egg matzohs

1/2 cup grated carrots
- 1
chopped onion
- 2
eggbeaters or 1 egg and 2 whites
- 1/2
cup finely chopped celery
- 1
cup applesauce
- 1
tsp. salt
- 1/4
tsp pepper
- 1/4
tsp poultry seasoning
Saute
onion on low heat till tender. Add celery and cook till tender.
Remove from heat and add to all the other ingredients in a large
bowl. mix well.
Spray pam on a casserole dish. Pour mixture into the casserole
dish and cover with foil baking for approx. 40 min at 350.
Can be made ahead of time and frozen. reheat till warm for the
sedar.
