What is the difference between vintage and non-vintage champagnes?

Moët & Chandon offers both vintage or non-vintage champagne. Vintage champagnes contain only wines from one particular harvest and are intended to display the unique characteristics of the grapes from that exceptional year. In 1992, budding took place at the end of May. Although this was fairly early in the Champagne region, it was under good climatic conditions. This resulted in a vintage of superb maturity, characterized by slightly lower-than-average levels of acidity.
