Bananes en Papillotes

Cut out a rectangle of aluminum foil (about 7" x 10")
Place the banana in foil and slather with apricot jam,
sprinkle butter evenly over banana. Add rum and vanilla.
Fold carefully so that none of the contents can escape and
bake in a hot oven at 400 degrees F. for 15-20 minutes.
The bananas should be served in their wrappers (en papillotes)
so that everyone can open his own. This is an absolutely delicious
dessert that is well worth the buttery and sticky fingers.
